INGREDIENTS
- Chicken thighs
- Dry rub Gringo seasoning
- 100 ml olive oil
- 1/2 tablespoon white vinegar
- Salt to taste
- Potatoes, cut into wedges
- Garlic cloves
- Fresh rosemary
METHOD
- Rub the dry Gringo seasoning evenly over the raw chicken thighs. Add olive oil, white vinegar and salt, ensuring the chicken is well coated.
- Allow the chicken to marinate for at least 2 hours to develop flavour.
- Preheat oven to 180 degrees Celsius fan forced. Place the marinated chicken on a baking tray.
- Arrange pre cut potato wedges and whole garlic cloves around and between the chicken. Drizzle or spray olive oil over the potatoes.
- Sprinkle additional Gringo seasoning and rosemary over the potatoes to taste.
- Cover the tray with aluminium foil and bake for 30 to 35 minutes.
- Remove the foil and return to the oven for another 10 minutes or until the chicken skin is golden and crisp.
